Crispy Baked Chicken and Salsa Potatoes
So if you are tired of all the turkey and ham you have consumed over the holidays and believe it is time for a change up here are a couple of easy recipes to try. One great thing about chicken is that it can be prepared so many different ways. The South is known for its fried versions and lately hot chicken has been really popular. So if you like your chicken crispy and your potatoes kicking, get your mouth ready for these recipes.
Crispy Baked Chicken
Time: Approximately 45 minutes
Preheat the oven to 425 degrees. Next, line with aluminum foil a roasting pan (with rack) large enough to hold the chicken pieces without them overlapping. Brush the rack with oil and place the chicken pieces on it (do not prick the chicken skin!). Sprinkle the meat generously with fine sea salt. Bake until golden and crispy on the outside and well cooked (about 45 minutes).
Jeff’s Super Simple Salsa Potatoes
Wash potatoes, dry and place them on a plate suitable for microwave use. Take a fork and use the tines to put at least one fork width of holes in each potato. Place plate with potatoes (hole side up) in the microwave and cook about 10 minutes. Once finished carefully remove plate (hot pads recommended) from the microwave and check that the potatoes are cooked to your satisfaction. Next, take a kitchen knife and slit the potatoes down the middle making sure they open up to receive the other ingredients. Take a clean knife and use it to apply a small amount of butter to each hot potato. While the butter is melting use salt and season the potatoes to your normal taste. Finally, use a spoon to take a generous portion of your preferred salsa and cover each potato. As an extra you may add a dollop of sour cream if you wish. Serve, eat and enjoy.
